Serves 4

Ingredients:

4 medium sweet potatoes, scrubbed and cut into fry-shaped pieces (try to cut them to relatively similar sizes so that they all bake evenly)

2 tbsp. olive oil

Pinch of cayenne pepper

1 tsp salt

Freshly ground black pepper

Method:

Preheat the oven to 220°C  Gas mark 7

Place the fries into a mixing bowl and mix with the olive oil, salt, pepper and cayenne pepper to ensure that they are all evenly coated

Pour the fries onto a non-stick baking tray and arrange in a single layer so that they crisp up

Bake for 15 minutes, then turn over so that they cook on both sides

Bake for a further 10- 15 minutes until crispy.
