Ingredients:

1 red pepper, thinly sliced

2 large field mushrooms, sliced

1 onion, sliced

1 small avocado, peeled, stoned and chopped

1/2 tsp. paprika

1/2 tsp. chilli flakes

Juice 1 lime

2 flour tortillas

2 handfuls herb salad

4 thin slices of haloumi

1 tbsp olive oil

Method:

Mix the vegetables with the chilli and paprika powder, then cook on a griddle or shallow fry along with the haloumi cheese for 3 minutes on each side

Meanwhile, mix the avocado and herb salad in the lime juice

Fill the tortillas with the grilled vegetables, avocado, haloumi and salad. Roll and slice in half to serve.

High in calcium and protein, but lower in fat and calories than other hard cheeses; haloumi cheese is a great choice for the weight conscious.
