4 fresh salmon fillets
1 medium fresh basil plant
100g pine nuts
1-2 cloves of garlic (depending on size and taste), peeled
2 tbsp olive oil
Freshly ground black pepper
Preheat oven to 200°C Gas mark 6
Season the salmon with the freshly ground pepper and place onto a baking tray
Meanwhile, take the leaves from the basil plant and place in a food processor with the garlic, pine nuts and oil. Blend until all the ingredients are chopped finely to make the pesto
Cover the top of the salmon fillets with the pesto and bake for 20-25 minutes.
Serve with a selection of seasonal fresh vegetables or a large side salad
Sometimes we take the nutritional value of herbs for granted, but they certainly do a lot more than just add flavour. Basil is one of the most nutritionally dense herbs and has exceptionally high levels of beta-carotene (a great anti-oxidant) and vitamin K, which is important for bone strengthening.
