Serves 2

Ingredients:

  • 2 boneless, skinless salmon fillets, chopped into chunks
  • 1 tbsp Thai red curry paste
  • 1 tsp soy sauce
  • 1/2 inch piece of fresh ginger, grated
  • 1 handful coriander
  • 1 tsp vegetable oil

Method:

Place all of the ingredients, except the oil, into a food processor and blend until it becomes a thick paste (save a couple of coriander leaves for garnishing).

Heat the oil in a frying pan over a medium heat.

Take a tablespoon of the mixture, roll into a ball using your hands. Flatten slightly and place directly into the frying pan.

Cook for 3-4 minutes each side until golden.

Serve with fresh salad and potato wedges, or jacket potato if desired.
