Serves 4 

Ingredients:

4 salmon fillets

½ lemon

Freshly ground black pepper

6 tbsp of mixed seeds (sunflower, sesame and pumpkin)

½ tsp of cumin seeds

½ tsp of chilli flakes

Few sprigs of coriander, chopped

Method:

Preheat the oven to 180°C  Gas mark 4

Lightly oil a baking dish and place the salmon fillets, skin side down onto the tray

Drizzle the lemon juice over the salmon fillet and season with freshly ground black pepper

Mix the seeds, cumin, chilli and coriander in a separate bowl and press a layer of the seed mixture onto each fillet

Cover with foil and bake for 20 minutes

Remove the foil and brown under a hot grill for a couple of minutes

Serve with steamed greens and new potatoes, or fresh seasonal salad.
