Ingredients:

150g quinoa

400ml vegetable stock

1 avocado, sliced

½ red pepper, chopped

Juice 1 lemon

1/4 cucumber, chopped

Handful mint, chopped

Method:

Pour the vegetable stock into a medium sized pan and add the quinoa

Bring to the boil and simmer for 15-20 minutes

Mix in the olive oil, lemon juice and mixed herbs and leave to cool.

When ready to serve, add all the other ingredients into the quinoa and gently mix the remaining ingredients

Serve and enjoy!
