Pea and mint dip
Serves 4
Ingredients:
400g frozen peas, defrosted
100g fat-free natural yoghurt
Juice 1 lemon
Small handful mint leaves
1 small red chilli, chopped
Freshly ground black pepper to taste
Method:
Put the peas, yoghurt, lemon juice, mint and chilli together in a food processor and blend until smooth.
Add black pepper to taste and divide into 4 small bowls
Serve with pitta bread sliced into wedges, carrot, cucumber and celery batons
Peas are anti-aging, high in energy and good for the immune system. Low in calories but high in nutritional value, these little powerhouses are a must.
