Nut roast

One of the easiest nut roasts ever!
Serves 4
Ingredients:
250g mixed nuts (Brazil, walnuts, cashews, hazelnuts, almonds)
400g canned chopped tomatoes
50g strong cheese, grated (optional)
1 egg, beaten
1 tsp yeast extract mixed with 1 tsp boiling water
1 onion, finely chopped
½ tsp dried mint
½ tsp dried sage
Black pepper to taste
Olive oil for greasing
Method:
Preheat the oven to 180°C Gas mark 4
Line a loaf tin with foil and grease with olive oil
Place the nuts in the food processor and grind finely
Combine the nuts in a large bowl with all the remaining ingredients. Mix thoroughly.
Pour the mixture into the foil lined loaf tin and bake for 45 mins to 1 hour, until firm to touch
Leave to cool slightly before slicing.
