Haloumi and avocado salad
Serves 2
Ingredients:
1 Avocado, peeled, destoned and sliced
4 slices light haloumi cheese
4 handfuls mixed green leaves
1/4 cucumber, peeled and roughly chopped
1 tbsp olive oil
2tsp balsamic vinegar
1 pinch freshly ground black pepper
Method:
Wash the salad leaves and arrange on the serving plates with the cucumber
Slice the haloumi cheese into thin slices and cook on a griddle or in a frying pan, on a medium heat for 3 minutes on each side until golden
Meanwhile, mix the extra virgin olive oil, balsamic vinegar and pepper in a small bowl
Tear the haloumi into smaller pieces and scatter over the salad leaves along with the avocado and cucumber.
Drizzle with the balsamic vinegar dressing to serve
