2 sweet pointed peppers, deseeded and halved

2 Flat mushrooms, sliced

2 onions, sliced

1 courgette, sliced

4 slices haloumi cheese

2 tsp dried herbs

1 clove garlic, crushed

1tbsp of pumpkin or sunflower seeds

1tbsp olive oil

1 tbsp balsamic vinegar


Heat the oil in a frying pan or on a griddle.

Cook the garlic on a medium heat for 2 to 3 minutes.

Lay all of the vegetables and haloumi out on the griddle, pour the balsamic vinegar over the vegetables and scatter the mixed herbs on top. Cook for 3 minutes on each side.

Remove from the heat, and serve with wholegrain rice or warm pitta bread.

All peppers are high in antioxidants, but red peppers are particularly high in them. Not only do they help prevent cell damage, cancer, and other chronic diseases; but they also reduce inflammation, making them great in the treatment of arthritis and asthma.
