2 sweet pointed peppers, deseeded and halved
2 Flat mushrooms, sliced
2 onions, sliced
1 courgette, sliced
4 slices haloumi cheese
2 tsp dried herbs
1 clove garlic, crushed
1tbsp of pumpkin or sunflower seeds
1tbsp olive oil
1 tbsp balsamic vinegar
Heat the oil in a frying pan or on a griddle.
Cook the garlic on a medium heat for 2 to 3 minutes.
Lay all of the vegetables and haloumi out on the griddle, pour the balsamic vinegar over the vegetables and scatter the mixed herbs on top. Cook for 3 minutes on each side.
Remove from the heat, and serve with wholegrain rice or warm pitta bread.
