Granola
Makes 8 servings
Ingredients:
250g Rolled oats
50g sunflower seeds
50g pumpkin seeds
150g mixed nuts (walnuts, almonds, cashews, brazil nuts)
50g desiccated coconut
150g dried fruit (cranberries, raisins, chopped apricots, chopped dates)
1 tbsp cinnamon
5 tbsp olive oil
5 tbsp honey
Method:
Preheat the oven to 180°C Gas mark 4
Put all of the dry ingredients, but not the dried fruit, into a large mixing bowl and stir well.
In a separate bowl, combine the honey and olive oil. Pour over the dry ingredients and mix well.
On a lined baking tray, spread out the mixture and bake for 20-30 minutes.
(After 15 minutes, take the granola out, stir, smooth it down with a wooden spoon and bake until golden brown.)
Remove from the oven and mix in the dried fruit.
Leave to cool completely and store in an airtight container.
Oats are great for the digestive system, lowering cholesterol and keeping energy levels high. A great way to start the day and miss that mid-morning energy slump.
