Makes 16 balls

250g almonds

12 dried dates

50g sesame seeds

50g desiccated coconut (extra for coating if desired)

3 tbsp. cocoa powder

3 tbsp. honey

1 tbsp. coconut or olive oil

Place all ingredients into a food processor until they are a crumbly texture and well combined. (Add a few drops of water if necessary to bind the mixture together, taking care not to over-moisten)

Put the mixture into a bowl and roll a tablespoon amount between your hands to form a smooth ball. Repeat the process to make 16 balls.

*(If you prefer to make energy bars rather than balls, line a small square tray with greaseproof paper, press the mixture down into the tray and chill for an hour before slicing)

Roll the balls in a bowl of desiccated coconut if desired

Refrigerate to make firm
