Carrot, coconut and avocado soup
Serves 4
Ingredients:
8 carrots, chopped into small pieces
750ml almond milk
250ml low fat coconut milk
1 inch piece of fresh ginger, finely chopped
½ tsp chilli powder
½ tsp ground cumin
1 avocado, peeled and chopped with the stone removed
1 tsp vegetable bouillon powder
Fresh coriander
Method:
Place all the ingredients (except the coriander) into a large pan
Bring to the boil and simmer gently for 20mins
Blend using a hand blender
Serve garnished with freshly chopped coriander
