Serves 2

Ingredients:

2 large avocados

1 400g can chopped tomatoes

100g mushrooms, sliced

1 pepper, de-seeded and thinly sliced

1 onion, finely chopped

1 clove of garlic, crushed

2 tsp. mixed dried herbs

2 tbsp grated strong cheese (optional)

Freshly ground black pepper

Method:

Preheat the oven to 200°C  Gas mark 6

Heat the oil in a large saucepan and gently fry the onion and garlic for 5 minutes until softened

Add the tomatoes, mushrooms, peppers and dried herbs, bring to a simmer and cook for 10 minutes, stir occasionally

Meanwhile, half and de-stone the avocados; scooping out a small amount extra where the stone was.

Fill the avocados with the tomato and vegetable mixture, place in an ovenproof dish

Cover loosely with tinfoil and bake for 15 minutes.(If you choose to add a small amount of cheese, remove the foil after 10 minutes and sprinkle the cheese on top before returning to the oven for 5 minutes)

Season with freshly ground pepper and serve with sweet potato fries and side salad.

You might be surprised to find that a food which is high in fat is also great for losing weight. Yet the monounsaturated fatty acids found in avocado’s are much more likely to be used as slow burning energy than stored on the body as fat.
